Our Gems of Oil

Emerald Green | Picual Variety. The strength and vibrancy of the Emerald is reflected in this oil made from Picual olives, renowned for their intense yet balanced character. A robust oil with herbaceous notes and hints of tomato and almond, culminating in an enveloping bitterness at the end, perfect for enhancing the authentic flavours of Mediterranean cuisine.

Red Diamond | Royal Variety. Rare and precious like a Red Diamond, this bottle holds the indigenous Royal variety, grown exclusively in the lands of Jaén. An elegant and harmonious oil, with delicate nuances of ripe fruit, leaving a definite bitter aftertaste, designed for those seeking refinement and uniqueness.

Blue Sapphire
| Organic Picual variety Absolute purity. This Sapphire-inspired bottle contains organic Picual oil, the fruit of sustainable and environmentally friendly cultivation. Pink Ruby | Hojiblanca Variety Warm and enveloping like a Ruby, this oil comes from the Hojiblanca variety, known for its strong and intense flavour. The Birth of Verde Esmeralda

CREATING AND KNOW-HOW
In the fertile heart of Jaén, Verde Esmeralda was born from the encounter between ancient traditions and innovation. Inspired by the wisdom of our ancestors and guided by the vision of D. Samuel López Fernández, we create an extra virgin olive oil that is a symbol of luxury and authenticity. Every detail, from aesthetic care to respect for nature, reflects our dedication to creating a legendary product.

FRUIT SELECTION
With a visionary and bold approach, we hand-select the best fruits from our crops. Each olive is carefully chosen to guarantee absolute quality, the result of perfected techniques and uncompromising dedication.

EXTRACTION PROCESS
The fight against pests in our olive trees is The transformation of the olives into our prized elixir is a ritual that requires precision and respect. We work without temperature fluctuations, keeping the temperature constantly below 20°C, to preserve every aromatic and nutritious note in the oil. This meticulous and respectful process enhances the purity and quality of every drop.

CARE OF THE ULIVES
We believe that quality comes from healthy olive trees. We nourish our trees with natural and sustainable products, keeping the leaves healthy and vital, which are essential for photosynthesis. Respect for the natural balance results in more authentic and sustainable production.

IRRIGATION CONTROL
We carefully monitor the water status of our olive trees, always ensuring the right water supply. Thanks to advanced technologies, we provide the necessary amount of water at every stage of growth, preserving resources and maximising the quality of the harvest.

ORGANIC DEFENCE AND SUSTAINABILITY
The fight against plagues is conducted with the utmost respect for the environment. We use natural methods such as the release of beneficial insects and biological control, avoiding the use of chemicals to protect our olive trees and the surrounding biodiversity.

NIGHT HARVEST
The fruit is harvested with the utmost care and attention, after a selection by zone, within the farm itself and the trees in each zone.As soon as the fruit begins to ripen, multiple analyses and tastings are carried out in the different areas of the estate, until the optimal zone and time for harvesting is identified.The harvest is carried out between 1 and 15 October, depending on the year and the development of the fruit. Since October is a month of high daytime temperatures, which in many cases reach 30 degrees, the harvest is carried out at night, thus ensuring that the temperature from the time the fruit is picked until the elixir is obtained is below 20 degrees.Once the harvest area has been selected, we hand-select the best fruit from each tree. The harvested fruit undergoes a selection process, during which those that do not meet the set parameters are discarded.Harvesting takes place over 7 nights each year. The first night is harvested manually and is intended for the LUXURY First night. The remaining 6 nights of harvesting are harvested mechanically and are used for the other lines.

IMPROVING BIODIVERSITY
Verde Esmeralda is committed to protecting and enhancing biodiversity. Our initiatives include creating habitats for wildlife, planting native species and sustainably managing water resources. Each gesture is a step towards a more harmonious and respectful agriculture.

ADAPTING IRRIGATION TANKS
We have installed several types of floating islands to encourage waterfowl to settle and nest. This intervention has turned our artificial irrigation reservoirs into an unexpected oasis for endangered species such as coots, teal, damselfish and storks. In doing so, we contribute to preserving the natural balance, creating a safe haven and breeding opportunities for wildlife in an artificially created wetland environment.

PLANTING VEGETATION IN IRRIGATION TANKS
We solved the problem of algal blooms in an ecological way by encouraging the growth of marsh and submerged vegetation. By doing so, we have avoided clogging of pipes and created an ideal environment for aquatic fauna.Water quality has improved due to increased oxygenation, fixation of suspended solids and reduction of nutrients, preventing algae growth.

HABITATS FOR REPTILES AND ANPHIBIANS
We have designed and created specific areas around the irrigation ponds, with the aim of encouraging the colonisation and reproduction of amphibians and reptiles, which are species that are particularly threatened by the continuous reduction of available natural spaces. These areas are designed to provide a favourable and protected environment to support the biodiversity of these vital animals for the ecosystem.

DRINKERS FOR STEPPA BIRDS
Since the water in the ponds is not easily accessible for all species, due to the slopes of the surrounding terrain, we have installed dedicated drinking troughs within the pond enclosure. This allows the steppe birds safe access to the water, providing them with an essential supply and promoting their survival.

RESTORATION OF BANKS WITH SHRUBS AND TREES
To improve the stability of pond slopes and prevent soil erosion, we have planted various shrub and tree species typical of the Mediterranean scrubland.
This intervention not only aims to physically reinforce the banks but also provides shelter, food, and nesting opportunities for wildlife.
Among the species used are wild olive, red juniper, strawberry tree, hawthorn, buckthorn, mastic tree, laurustinus, lentisk, myrtle, phillyrea, white osyris, four-parted osyris, and thymelea, all contributing to the area’s biodiversity.

REFORESTATION OF DEGRADED AREAS
We are introducing trees into an ecosystem dominated by monocultures, creating a significant landscape transformation on our farm.
These trees will offer habitats for birds that help control olive tree pests. The reforestation was carried out at low density to preserve natural grass and encourage the establishment of other flora and fauna species.

RESTORATION OF ROADS, CANALS, BARRIERS, PATHS, BOUNDARIES, ETC.
Our restoration work aims to encourage the settlement of natural enemies of pests.
We have selected plants that bloom at different times of the year, ensuring a continuous food supply for beneficial fauna. Among the species used: Rhamnus alaternus, Myrtus communis, Pistacia lentiscus, Juniperus sabina, Dittrichia viscosa, Lavandula latifolia, and Rosmarinus officinalis.

RESTORATION IN GYPSUM AREAS AND GULLIES

In our natural lake and gullies with gypsum-rich soil, we are promoting the expansion of local gypsum-adapted species through new plantings.
Selected species include: Jurinea pinnata, Reseda suffruticosa, Teucrium pumilum, Gypsophyla struthium, Ononis tridentata, Launea resedifolia, Helianthemum squamatum, and Lepidium subulatum.

Soil Regeneration Techniques

We have realized changes in the way we relate to land, which allow us to stop losing soil and now we gain in fertile soil. The key is to maximize natural dynamics, thus regenerative interventions serve to increase the level of organic carbon in soil, to be more fertile and to retain more water. By managing mulches, good managing of the pruning, reuse of alperujo, growing microorganisms, and subsequent soil application, we are favoring the regeneration of soil life.

We have used Key Lane techniques to increase water storage capacity on land and redirect water to areas that interest us. In one of our farms, we have a natural lake, and with all the techniques mentioned, we have achieved greater natural recharge, which allows us and wildlife dependent on this landscape to tap this resource.
